The Irish Cocktail Fest runs from 10th to 15th October. The Fest is an All Ireland Celebration of cocktails made with Irish spirits. Koh has created a Cocktail especially for the Fest featuring Teeling Whiskey. The “Bennu Fizz” is made with Teeling Small Batch Whiskey, propolis, Madeira, lime, gunpowder syrup, pastis soda and egg white and is delicious! €9.95 for the duration of the Fest. Our Albarino is the delicious and fresh Lagar de Cervera - powerful and buttery in the mouth, with a pleasant sensation of freshness, this is a complex and well balanced wine.

Vintage

2015 was a particularly warm and dry year in Rías Baixas. Budbreak began two weeks earlier than normal in this area. During flowering, conditions were ideal for grape setting. The summer proved particularly sunny, without rain except in August. Fortunately, the rain stopped sufficiently in advance to be able to pick the top-quality grapes in perfect condition.

Winemaking and ageing

After manual harvesting, the grapes were placed in 20 kg tubs and taken in refrigerated transport to the winery. The best clusters coming out of the sorting table were destemmed and the grapes macerated for 10 hours. They were then gently pressed at 10 °C in an inert atmosphere to prevent oxidation. After decanting, the clean must underwent alcoholic fermentation with the temperature kept at 15 °C. Due to the characteristics of this harvest, 25% of tanks underwent malolactic fermentation. After the first racking and until bottling, the wine was kept in contact with fine lees, with periodic stirring to achieve greater density and complexity.

#MondayMotivation: Modern Lemonade at Koh

The Monday blues are strong today, but if we look on the bright side, by the time you finish reading this post you’ll be that bit closer to the weekend, with an incredible home-made cocktail to look forward to. At Koh, we pride ourselves on our exquisite and considered cocktails; you’ll always find something that will tickle your fancy and we love working with local producers. Though the ultimate cocktail experience can only be had in-house with us (and every day of the week, didn’t you know), we’ll be letting you in on a few Koh secrets over the coming weeks, sharing tips and recipes so that you can enjoy a little bit of Koh at home too.

First up? How to make a mean Modern Lemonade; perfect for these balmy August evenings.

This signature cocktail is light and refreshing and not too overpowering in its alcohol content.

You will need:

35 ml of Sloe Gin Plymouth

14 ml of Oloroso Sherry

1 dash of orange blossom water

10 ml of honey water

15 ml of lemon juice

100 ml of soda water

(All of the above can be found at one of our favourites, The Celtic Whiskey Shop or also in Fallon & Byrne)

Method:

Add all of the ingredients above (minus the soda water) into a good shaker and pack it full of ice. Shake it for a good 15-20 seconds before simply straining it into a highball glass (a tall tumbler will do), full of ice. Then add your soda water to fill the glass. To garnish, clap with a few mint leaves in your hand - this awakens the flavours of the mint and will utterly transform the flavour - and add in a slice of dried lemon for that extra professional finish.

Whisky Tasting Flight Special from That Boutique-y Whisky Company

We are delighted to feature 3 of the fantastic Scotch whiskys from That Boutique-y Whisky Company as our Special Whisky Tasting Flight this month.

That Boutique-y Whisky Company:

That Boutique-y Whisky Company bottles limited edition single malts, single grains and bourbons from a variety of renowned distilleries (including some closed distilleries) as well as producing award-winning blended malts and blends. Each numbered bottle is adorned with a fantastic hand-illustrated label. These comic book-style labels feature tales from the history of certain distilleries, famous individuals from the drinks industry or even scenes as clearly bonkers (but equally brilliant) as a velociraptor fighting a shark! There are usually plenty of other little details for you to find too…

Since April this year these whiskys are being bottled with age statements and That Boutique-y Whisky Company have been very clear about the reasons behind this move, still believing that flavour and overall quality are more important than age. It’s partly been driven by the interest of whisky fans, but is also part of their wholehearted support for the campaign for Scotch whisky transparency that John Glaser of Compass Box launched earlier that year. They’ve committed not only to introducing age statements (which tell you the age of the youngest component), but to list the breakdown of the various whiskies that make up each bottling as soon as the campaign is successful and EU legislation allows it.

How it Works:
We will serve you a small measure of each of the three That Boutique-y Company Whiskys. The measure will be 20 ml of each whisky, which is smaller than a normal measure but enough to experience the whisky. The price of the flight is €20.

We were delighted here in Koh that ‘The Culture Trip’ recently chose us among the 10 Best Restaurants in the Liberties, Dublin.

One of Dublin’s most historic areas, the Liberties area is now a centre of commerce and enterprise. It was first occupied by the Cambro Normans in the 12th century, but many of the buildings date back to the 16th to 18th century. There are Restaurants from all over the world in the Liberties area, and Koh is proud to be featured as one of the best. You can read the full article here:
